Healthy Blueberry and Banana Muffin recipe

How good are Muffins, especially for breakfast with a coffee!! ohhh - so delicious. I've made a healthy version so you don't have to feel guilty about eating them and it's super simple and quick to make. Enjoy!!



INGREDIENTS

1/2 cups self-raising wholemeal/rye flour or you can use almond meal with 1tsp baking powder

1 1/2 Tbsp of coconut sugar

1 Tbsp rolled oats

1 free range egg lightly beaten (try get organic too!)

1 mashed Banana

2 Tbsp of any milk, I use almond milk

2 Tsp of melted coconut oil

1/2 cup of frozen blueberries


METHOD

Preheat oven to 180°C and either line muffin tin with paper cases or grease with coconut oil


Mix wet ingredients into a bowl (beaten egg, milk, banana and oil) and combine flour, sugar and rolled oats until all ingredients are combined.


Gently fold through frozen blueberries. I sometimes add in a couple of chopped dates as well. So yum!


Divide mixture into muffin tin and bake for 20-25 mins or until a skewer comes out clean when you insert into the centre.


Allow to cool slightly and put the kettle on!
