Fatigue fighting recipe - Mediterranean Salad

Has your fatigue hit you as if it were 3pm, you hadn't slept in 24 hours and there wasn't a coffee machine in sight? When really, its 10am, you had a pretty decent sleep AND there is this very special fatigue fighting salad in sight! Yoohoo! Fatigue is the number one side effect in cancer treatment, every human body that is undergoing treatment is using up a huge!! amount of energy and it defiantly takes a toll. Thanks to this delightful salad recipe created by Rebecca Katz we can get that little pick me up and heres how. Lets get cookin' good lookin'



Mediterranean Lentil Salad

Serves 5

Time: 40 Minutes


You will need:

  • 1 Cup dried green lentils, rinsed well

  • 1 Garlic clove pealed and roughly chopped

  • 1/2 Tsp dried Oregano

  • Pinch of sea salt

  • 2 Bay leaves

  • 1 Cinnamon stick or 1/4 Tsp of ground cinnamon

  • 1/4 Cup of Extra Virgin Olive oil

  • 2 Tbs freshly squeezed Lemon juice

  • 1 Tsp Lemon zest

  • 1/2 Tsp ground Cumin

  • 1 red Capsicum seeded and diced

  • 1 Cucumber chopped into small bite size pieces

  • 1/4 cup of finely chopped dried cranberries (optional)

  • 1/2 Cup of pitted Kalamata Olives, rinsed and roughly chopped

  • 3 Tbs freshly chopped mint

  • 3 Tbs freshly chopped Parsley

  • Freshly ground pepper to taste

  • 1/4 Cup of Organic feta cheese (optional)

Method:

  • First, place the rinsed Lentils, Garlic, Oregano, salt, Bay leaves and Cinnamon into a pot. Cover with 2inches of water. Bring to a boil then lower the heat to low and cook till lentils are tender. Takes about 20-30 mins


  • In a jar or cup, add in the lemon juice, lemon zest, olive oil, cumin and 1/4 Tsp of salt. Mix well. Once the lentils are done, strain any left over water and mix together with this lemon dressing. Put into the fridge for approx. 20 mins.


  • While the lentils are cooling we can start putting the salad together. Chop up the cucumber, capsicum, olives and add to a large bowl along with the freshly chopped mint, parsley, pepper and I've added a personal touch to this recipe by throwing in some dried cranberries - They are so great for the Kidneys in detoxifying, high in antioxidants and it really compliments the rest of the ingredients.


  • Once the lentils are out of the fridge, add to the salad mixture and give it a good toss. Taste to check the seasoning and add in extra pepper or salt if needed (don't forget, if you're adding in feta it is salty so keep that in mind when adding extra seasoning).


  • I serve this with an extra squeeze of lemon, crumbled feta and some extra mint leaves.
